In a large, deep frying pan add:
In a large, deep frying pan brown lean ground chicken or beef & one diced onion & diced bell peppers.
Add 2 tablespoons house seasoning (onion powder, garlic powder, paprika, salt & pepper)
Add chili powder (as per liking, maybe 1/2 tbsp. My kids don't like it too strong so I opt for less)
1 cup of uncooked rice - Toast the rice in the pan for 2 mins before adding next ingredients
1 can drained and rinsed black beans
1 can diced tomatoes with green chilies
2 cups beef broth
1 cup corn
Cover. Let simmer on low till rice is cooked. About 18-20 mins. Do not remove lid while cooking.
Top with cheese. Broil in oven for a few mins for cheese to melt.
Optional: Add extra cheese and wrap in a burrito. Or use tortilla chips and scoop up the mixture on a tortilla chip.
Optional: add greek yogurt, salsa, hot sauce, guacamole.
