Chicken Meatballs:
1 lb ground chicken
1 tsp onion powder
1 tsp garlic powder
1/2 tsp salt
1/2 tsp pepper
1-2 tsp Italian seasoning
1/4 cup bread crumbs (not in the Budget Meal Plan shopping list but you can blend up any fresh/day old bread you have in your cupboard or crackers).
Binder (choose one): 1 egg or 1 tbsp plain yogurt or 1 tbsp mayo or 1 tbsp cream
Mix everything together, roll into small golf ball sized balls
Bake at 400 degrees F for 15-18 minutes or until fully cooked (165 degree F internal temp)
Simmer cooked meatballs in 1 jar of pasta sauce and 1 tbsp tomato paste. Optional to add Italian seasoning. Simmer for 10 mins.
Subs:
Slice buns almost in half (leave partially attached)
Add cheese to bun and broil 1-2 mins until melted before adding meatballs
Adding the cheese on the bun first creates a barrier so the sauce doesn't make the bun soggy
Top sub buns with meatballs and sauce mixture
