Tip: I only meal prep for 3 days at a time. You have ingredients for 8 noodle jars. Portion chicken into 8 portions, what you won't use in 3 days, portion into small sandwich bags and freeze.
Cook Chicken Tenders
Remove the tendon (white strip) by gripping it with a fork and pulling with a piece of paper towel while holding the chicken steady.
Coat chicken in house seasoning (onion powder, garlic powder, paprika, salt & pepper)
Air fry for 10 mins - 14, flipping half way through (cook until 165 internal temp)
Let rest 5 mins
Slice
In 3 Jars
Add cooked chicken to the bottom
Add 1 bunch of vermicelli noodles to each jar
Shove as much coleslaw in as you can fit in the jar (1/4 cup or more)
Optional: Add edamame for extra protein and fibre
Seasoning container
In a separate small storage container add:
1 tbsp chicken bouillon
1 tbsp soya sauce
1 tbsp honey
1 tbsp sriracha (optional)
This seasoning container is for all 3 noodle jars
At the office, simply add boiling water & 1 tbsp of seasoning mix, let sit for 5 - 10 mins, mix or shake (careful jar is hot). Enjoy!
