TIP: Cook the pulled pork on the pulled pork tacos night and use left overs for the pulled pork mac and cheese. The mac and cheese is more labour intensive so it will spread the work load out that way. If you choose to cook the pulled pork today. View the Pulled Pork Tacos recipe.
Step 1: Coleslaw
1/3 cup plain Greek yogurt - Optional. Can use plain yogurt, sour cream, or just extra milk/cream
1/3 cup light mayo
Splash of vinegar
Splash of milk
Sprinkle of sugar
Salt & pepper to taste
Add coleslaw mix and place in fridge. Best to let the salad sit for 30 mins while preparing dinner as the cabbage will release water and makes it come together nicely.
Step 2: Pasta
Cook pasta as per package directions
Step 3: Cheese Sauce
Add 3-4 tablespoons fat (butter, oil or margarine) to pot, melt (do not exceed 1/4 cup)
Add 1/4 cup flour, mix and let flour cook for a minute
Add 2.5 cups of cream slowly. As you slowly add the cream, aggressively mix it so that there aren't any flour clumps. Add 1 cups pasta water.
Add house seasoning (onion powder, garlic powder, paprika). Add some Italian seasoning. Add salt to taste.
Turn off heat and stir in 1.5 - 2 cups grated cheese. Optional cheddar or mozzarella.
Step 4
Add sauce to cooked pasta. Let sit for 5 mins to to ticken before serving.
I do not do a baked homemade mac and cheese, I find it dries it out and is not as creamy.
When serving, top mac and cheese with some left over reheated pulled pork.
I topped mine with hot sauce. The vinegar in the hot sauce paired very nicely with the pulled pork and mac and cheese, i recommend adding hot sauce!
