If you have left over chicken from earlier in the week, this is perfect to dice up and use tonight.
Cook chicken breasts:
Spray oil in pan
Pre-heat pan
Season chicken with salt & pepper
Cook chicken for approx 5 mins on each side till it gets golden brown
Temp your chicken. When at 155 degrees add extra seasonings (any premix seasonings you have on hand)
Check chicken temp again and remove from pan at 165 degrees. Let chicken rest on plate to redistribute juices.
In a medium to large pot:
Small amount of cooking oil
Saute one diced onion
Add 1.5 cups rice
Add 1/3 cup red lentils
Add 4 cups chicken broth
Salt & pepper to taste
Cover tightly and simmer the rice until cooked, about 15-18 mins
Dice up broccoli into very small pieces
Add broccoli, if you need add a splash more chicken broth. Cook for a few mins.
Add cubed cooked chicken
At the very end, mix in grated cheddar cheese as per your liking:
I personally do a small amount of cheddar cheese mixed in for my calorie deficit and leave grated cheese on the side for my family to add on top of their dinner.
