Step 1: Cook Chicken
Spray oil in a large deep pan
Heat pan over medium-high heat
Add diced chicken breast
Season with house seasoning (onion powder, garlic powder, paprika, salt and pepper)
Sear until lightly golden (does not need to be fuly cooked)
Remove chicken from pan and set aside
Step 2: Cook Rice
In the same pan add:
One diced onion, cook 2-3 mins
Add a small splash of broth to deglaze the pan
1.5 cups RINSED rice. (I wash my rice in a large bowl, swirl the water around with my hand, pour the water out the side of the bowl, and do that 4 or 5 times till water runs clear).
3.5 cups chicken broth
Bring to a simmer
Cover tightly and cook on low heat until rice is nearly done (15-18 mins)
Step 3: Finishing
Add cooked chicken back in pan
Add finely chopped broccoli
Add a splash of broth if mixture looks dry
Cover and cook 5-7 minutes until broccoli is tender and chicken is fully cooked
Turn heat to LOW or OFF
Stir in:
1/2 cup half & half cream
100-150 g sheddred cheddar cheese (1 - 1.5 cups)
Mix until creamy
Taste and add salt & pepper as desired
