Prep Tip: Use 1/3 of your pork loin for this recipe. When you thaw the frozen pork loin, cook the pork for this recipe. If you won't be eating it for a few days, refreeze it cooked.
Prepare the Pork:
Slice your pork loin into thin strips.
Velvet your 1/3 sliced pork loin with 1/2 tsp baking soda. Mix together and let sit for 15 - 20 mins max. Rinse thoroughly. Pat dry. This gives it the restaurant Chinese food texture.
Season pork with soya sauce, garlic powder, 1/2 tsp salt, pepper and optional 1 tsp cornstarch (for coating pork before cooking).
Optional: Let cool then freeze.
Fried Rice:
1 tbsp oil in large skillet
Cook half a diced onion
Add 1.5 to 2 cups frozen mixed vegetables
Optional: Push veggies to the side and scramble an egg in the pan (if you have eggs as not included in Budget Meal Plan)
Add 2-3 cups cooked rice (day old is best but fresh works too)
Mix and cook a few mins
Add seasoning: Soya sauce, 1 tsp garlic powder, 1/2 tsp onion powder. Add a bit of any sweetener you have such as 1 tbsp honey or brown sugar or white sugar.
Optional: Add Sriracha
