Tip: I only meal prep for 3 days at a time. Freeze what you will not consume in 3 days.
Cook eggs:
Lightly spray a large frying pan with oil.
Crack 12 eggs into the pan. I start by placing the eggs around the outside edge of the pan and work toward the middle.
Season with salt and pepper.
Break the yolks and cover the pan with a lid.
Cook until the egg whites are set and mostly cooked through.
Flip the eggs. Use your flipper to cut eggs to separate.
Cook for another 1-2 minutes until fully cooked.
Turn off heat and let fully cool
Assemble:
Lay out 12 pieces of tin foil
12 English muffins, split in half
12 cooked eggs
Spread 2 packages of ham out evenly across the 12 sandwiches
12 slices cheese
Optional: Top each sandwich with 7 ml spicy mayo
Portion:
Save enough for 3 days in the fridge
Store the rest in the freezer
Cook:
Place in air fryer in the morning for 10 - 15 mins
Reheating from frozen:
Do not try to cook it directly from frozen. Eggs will be watery.
The night before move sandwich from freezer and place in fridge
Let thaw overnight
Air fry in the morning for 10 - 15 mins
